Anthocyanins, also known as anthocyanins, are a class of water-soluble natural pigments that widely exist in plants in nature, and are colored aglycones obtained by hydrolysis of anthocyanins. Most of the main color substances in fruits, vegetables and flowers are related to it. Under the condition of different pH values of plant cell vacuoles, anthocyanins make petals show colorful colors. All anthocyanins in their natural state exist in the form of glycosides, called anthocyanins, and few free anthocyanins exist. Anthocyanins widely exist in flowering plants (angiosperms), and their content in plants varies greatly with varieties, seasons, climates, and maturity. According to preliminary statistics: 27 families and 73 genera contain anthocyanins, such as purple sweet potato, grape, blood orange, red cabbage, blueberry, eggplant, cherry, blueberry, red raspberry, strawberry, mulberry , hawthorn, morning glory and other plants have a certain content in the tissue.

The earliest and most abundant anthocyanin is the red grape skin pigment extracted from red grape pomace, which was launched in Italy in 1879. The pigment can be extracted from grape pomace, the waste of wineries. Elderberries contain a lot of anthocyanins, and they are all cyanidins, with a fresh weight of 200-1000 mg per hectogram. Studies have found that grape seed and pine bark extracts have the highest levels of anthocyanins.
